Is the temperature of the water really important?
The yeast will perform best if the water is neither too hot nor too cold.  110˚-115˚F is ideal.

Why does the recipe say to let the yeast and water mixture sit for 6 minutes?
We have found that 6 minutes is just the right time to get the yeast foaming for best mix performance.

Why do the eggs need to be at room temperature?
If the eggs are cold, they may slow the action of the yeast when combined (see baking tips).

Can the mix be prepared without eggs?
Yes.  We have tested 2 options.  You can use pre-packaged egg replacer as directed, or you can use flax meal. To use this method, combine 3 tablespoons flax meal and 9 tablespoons room temperature water.  Let sit for about 3 minutes.  Add to mix in place of eggs.

I don’t have canola oil, can I substitute another type of oil?
Yes, however the flavor of the final product may vary slightly.  The recipe was developed with canola oil.

Can I use a hand-held mixer?
Yes.  You may find it necessary to stop the mixer and push dough (thick batter) down the beaters during the mixing process.  The recipe was developed with a Kitchen Aid stand mixer (do not use dough hook).

Do I have to use parchment paper?
No.  A non-stick cooking spray can also be used (spray baking pan generously).  We find it easier to control and shape the roll batter on parchment paper.

I see dark colored specks in the mix, is everything okay?
This is normal.  We use a variety of flours for optimal taste and texture and they vary in appearance.

The dough seems very soft, is this normal?
The dough is not the same as bread dough.  It is more like a stiff batter.

How do I smooth the top of the rolls as suggested in the directions?
Dip a spoon in water (to avoid sticking), and then, with the back of the spoon gently smooth and shape each roll as desired (some prefer to use a butter knife.)

My rolls didn’t seem to rise much, even after an hour.  Is that okay?
It’s fine.  Rolls will rise higher and wider while baking.

Why do I heat my oven to 375˚F and then reduce the temperature to 350˚F?
Some heat is lost when you open the oven to put in the pan of rolls.  We have found that this method provides consistently good results.

What is the best way to wrap rolls for freezing?
We like placing the rolls in individual zipper bags (sandwich bags) and then putting all of the individual bags inside a larger zip freezer bag.

Do I have to toast or re-heat frozen rolls?
No!  Rolls can be thawed at room temperature (left in sandwich bag), or they can be removed from the bag and thawed in the microwave if you are in a hurry.
